Holly's Cooking Challenge - Week 1, Recipe 3

I decided on a dessert for todays recipe: Chocolate and Orange Muffins


3 cups of flour with baking powder
1 cup of sugar
1 bit of salt
2 eggs
1 cup of milk
1/2 cup of olive oil
Zest and juice of 1 orange
180 gr of chocolate drops


Preheat oven to 200 degrees C. Sift the flour and baking powder into a large bowl. Add the remaining ingredients and mix to a batter. (Do not over-mix the batter. Too much mixing will create tougher muffins.) Divide the mixture evenly between 12 muffin cases in muffin trays. Bake for 15-18 minutes.


I'm afraid I left them a bit too much time in the oven and that's why they look so brown. I'll have to try it again with less time.

It was what we had at tea time yesterday.
