Holly's Cooking Challenge - Week 1, Recipe 3

I decided on a dessert for todays recipe: Chocolate and Orange Muffins

3 cups of flour with baking powder
1 cup of sugar
1 bit of salt
2 eggs
1 cup of milk
1/2 cup of olive oil
Zest and juice of 1 orange
180 gr of chocolate drops

Preheat oven to 200 degrees C. Sift the flour and baking powder into a large bowl. Add the remaining ingredients and mix to a batter. (Do not over-mix the batter. Too much mixing will create tougher muffins.) Divide the mixture evenly between 12 muffin cases in muffin trays. Bake for 15-18 minutes.

I'm afraid I left them a bit too much time in the oven and that's why they look so brown. I'll have to try it again with less time.

It was what we had at tea time yesterday.

  1. I WANT to try these!! They look so yummi and I could never resist a good muffin with a little tea.:D

  2. I'm going to try them again soon with less time in the oven. They'll probably taste even better ;-)

  3. These look very yummy, chocolate and orange is a perfect combination! ;-)

  4. Wow! You're way ahead of me! They look/sound yummy!

I made my first December challenge today ... BBQ meatballs (with beer!).

I love to chat about books and stuff and I would love to hear from like minded readers. Please do leave me a comment :-)
